Before we turned vegan, my mum in law often made bitter gourd with black beans and chicken. So it’s the first time she is remaking this dish using just tofu and some sausages we have left in the freezer. It’s really delicious and is Hubby Ro’s favourite.
1 bitter gourd (She recommends to buy the slim and greener ones as they are more bitter and to avoid the yellow ones)
2 Shallots, chopped
6 teaspoons of black bean sauce (More the merrier if you want more black bean flavour)
2 teaspoons of garlic
2 teaspoons of sugar
1 small carrot, sliced
3 flower mushrooms, sliced
2 packets of firm tofu, chopped
3 mock sausages, chopped
2 tablespoons of olive oil
Heat pan with 2 tablespoons of olive oil. Add in sliced shallots and chopped bitter gourds.
Add in 3 teaspoons of black bean sauce and 2 teaspoons of chopped garlic. Stir them well.
Next add in sliced soaked mushrooms.
Add sliced carrots and 2 teaspoons of sugar. Stir well until all is cooked and placed them in a bowl and set aside. Do not add salt as the black bean sauce is pretty salty.
Next, wash the pan and heat it up with 3 tablespoons of olive oil. Add in chopped tofu and sausages and cooked them till they turn crispy brown. Set them aside once they are done.
Before serving, mix the pan fried tofu and sausages with the cooked black bean bittergourd mix and stir fry them both together. Add 6 tablespoons of soup stock for some gravy and serve while hot!
