Saw this quick healthy tomato soup recipe a couple of months back and saved it under “vegan dishes to try one day!”

Using just a few simple ingredients this dish is SUPER easy to whip up. Just boil a typical ABC soup and blend it into a classic rustic country soup you can find in so many western cafes or restaurants.

10 small tomatoes (I chose all the cherry red ones), sliced half

2 red onions, chopped

3 stalks of celery, chopped

1 bunch of chinese parsley

3 small carrots peeled and chopped

1 teaspoon of salt and pepper (Add more based on your own taste preferences)

Chop everything up and put into a big pot. Add 3 big bowls of water and make sure all vegetables are covered with water. Do not put too much water as it might over flow or get too diluted. Boil all vegetables until they turn soft and mushy.

Once cooled, pour into blender (use a big one if you have) and blend. Blend until you get a smooth paste and scoop any remaining scraps of vegetables hiding out there. Add a sprinkle of pepper and salt if you want more taste. I want it as natural as it can be with just pepper. No oil was needed in the entire process and at the end of the day you will get a thirst quenching yummy tangy tomato soup. Serve hot with bread toast or with rice!
