Home Cooking- Maple Balsamic Vinaigrette Spinach Salad

Had some left over spinach and decided to whip up a light lunch and I found this amazing maple balsamic dressing and whipped it up in seconds. It was easy and very yummy.

For the Dressing

  • 1/4 cup olive oil (I used extra virgin oil)
  • 2 tsp maple syrup (I used agave nectar syrup instead)
  • 2 tsp balsamic vinegar
  • 1 tsp dijon mustard (did not add this as I wanted something lighter)
  • 1/8 tsp salt
  • Sprinkle black pepper to taste

Once everything is in, I mixed them together and set it aside. Keep it chilled for 30 minutes to an hour before serving.

Using half a packet of baby spinach leftovers, tomatoes and a handful of raw nuts (figs, cashews, almonds, pistachios, raisins) from my nut bag. I roasted some pine nuts and sesame seeds for more aroma too. A perfect gourmet salad filled with vitamins, proteins and fibers!
