Home Cooking: Tomato Basil Bruschetta & Soy Mayonnaise Apple Lettuce Salad


After trying the tomato basil bruschetta from Vidhya’s dinner party a couple of weeks back I decided to try re-making her recipe. It was really easy and tasted just as good as hers. She recommended that it will be better to make the tomato 2-3 hours earlier before the party so that it will be well seasoned and taste even better.


2 packets of Roma mini tomatoes (I used 4 regular ones) cut into small cubes

1 tbsp extra virgin olive oil

1-2 tbsp basil olive oil (We are so lucky she bought us a bottle when she was in Spain)

1/2- 1 tsp of salt to taste

2 garlic cloves chopped really fine

A bunch of basil leaves about 7-8 average size chopped fine

Sprinkle of black pepper (optional)


Mix all the ingredients together and let it marinate in the fridge for 2-3 hours before serving!


The next dish I whipped up was inspired by the lovely salad medley from Veggie Cottage.! Using just 5 ingredients the salad was done and was ready to be eaten.

1 Red/Green Apple Chopped

1/2 portion of Lettuce

2 tbsp of soy mayonnaise (bought this at Real Food Cafe $11.50) It taste seriously good and just like any normal cream mayonnaise.

A handful of raisins

A handful of walnuts

Mix them all up and refrigerate before serving!
