I was craving korean food and found this easy recipe to whip up something quick and healthy! It was done within minutes and was tastier than I expected:)

Kimchi Fried Quinoa

  • 1 cup leftover cooked Quinoa (I added 3 teaspoons of mirin over them)
  • 1 cup Kimchi, chopped (I bought a jar from yes natural shop)
  • 1 Green Onion, Chopped (I did not add this)
  • 2 Tablespoons Kimchi Broth (the leftover juice)
  • A drizzle of Sesame Oil (I added 2 teaspoons)

Optional

  • Sliced dried Kim (sushi paper) for garnish
  • ½ tablespoon gochujang for extra spiciness

Directions

Sautee the chopped Kimchi for two to three minutes over medium flame until heated through and then add the green onion and quinoa. Cook all the ingredients for another two to three minutes and then add in the kimchi broth and cook for another minute. Drizzle everything with sesame oil and transfer to a plate. I added baked cashew nuts as I ran out of sesame seeds! It was as  yummy as it looked:) Mine was made with red quinoa and it tasted just as good. It hid all my kimchi vegetables and looked like a huge plate of brown rice doesn’t it!
